Jelly Jewels

1/2 cup butter
1/4 cup sugar
1 egg yolk (set the white aside)
1 cup flour
1 tsp vanilla
Shredded coconut and/or chopped walnuts or pecans
Red and green jelly (or whatever kind you like)

1) Preheat oven to 350*F (180*C)

2) Cream butter and sugar. Add egg yolk and blend well. Add vanilla. Add flour gradually, mixing well after each addition. (The recipe doesn't call for it, but I find it best to put the dough in the fridge for about an hour before baking) Form dough into 1 inch balls. Dip the balls into the egg white and roll in the coconut and/or nuts (you can do either or, some of each, or mix it all together, which is also nice).

3) Place balls on greased cookie sheet and make an indent in each one with your thumb. Bake for about 10 to 15 minutes until lightly browned. You might need to redo the indent after a few minutes of baking. When cool, fill center of each cookie with jelly. Makes about 18 cookies.
