Bread Pudding

10 cups cubed bread
1/4 cup butter or margarine, melted
1/2 cup raisins, sultanas, or dried mixed fruit
1 tsp mixed spice, or 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp allspice
6 eggs
3/4 cup sugar
2 tsp vanilla
1/2 tsp salt
3 cups cups hot milk

1) Preheat oven to 375*F (190*C) (a little less for fan forced ovens).

2) In a large bowl, combine bread, melted butter, raisins, and mixed spices; mix well.

3) Spray a 2 qt. baking dish with cooking spray and spread bread mixture evenly in the baking dish.

4) In a bowl, beat the eggs; add sugar, vanilla and salt; stir until sugar is dissolved. Then slowly whisk in hot milk.

5) Pour egg mixture over the bread and let stand for about 5 minutes. Then sprinkle a little mixed spice over the top before putting it into the oven.

6) Bake for about 25 to 30 minutes or until a knife inserted into the center comes out clean.
