Fat Burning Veggie Soup

This is a recipe I found years back that actually helps raise your metabolism and burn fat. I don't actually follow the prescribed diet that goes with it, but I find it to be a good cleansing soup to eat too when my digestive system goes out of whack. The beauty of it is... you can eat as much as you like, and the more you eat of it the better.

4 cans diced tomatoes
1 bunch of shallots/green onions, diced
2 large onions, diced
1 bunch of celery, diced
1 pkg frozen green beans
2 green peppers, diced
6 large carrots, sliced
beef, chicken or veggie broth or flavor cubes (or you can just add salt for flavor if you prefer)
Herbs (any that you like to put in soup... sage and dill taste awesome in soup)

This soup is very easy to make. Combine all the ingredients in a large pot. Cover them with water or broth. Bring it to a boil, then lower the temperature so that it's a slow simmer. Then let it simmer, covered until all the veggies are cooked. Oh and if you want, you can add a bit of barley to the soup too.

This soup freezes well too, so you can freeze it in portions and just take some out whenever you want to have some.
