Soul Cakes

1 cup softened butter
3 1/2 cups sifted flour
1 cup sugar
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp allspice
2 eggs
2 tsp malt vinegar
Powdered (Icing) Sugar

1) Preheat oven to 350*F. Cut the butter into the flour with a fork until it looks like breadcrumbs. Mix in sugar and spices.

2) Lightly beat eggs in a small bowl and add to flour mixture. Add malt vinegar. Mix until you have a stiff dough.

3) Knead dough for a few minutes on a floured surface. Roll to 1/4 inch thick. Use a floured glass or circular shaped cookie cutter (about 3 inches in diameter). Place on greased baking sheet.

4) Bake for about 25 minutes. Sprinkle with powdered sugar while still slightly warm.
